I am sure you know by now that the Super Bowl is on Sunday. That probably means that you are in need of some recipe ideas. I recently made some quick and easy quesadillas with Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies that would be a great appetizer for game day. This is just one recipe that you could make with two new varieties of Del Monte® Petite Cut Diced Tomatoes which include:

As I mentioned earlier, I tried out a recipe with the Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies. I found the recipe called Santa Fe Chicken Quesadillas on one of Del Monte®’s Pinterest boards. I was drawn to this recipe because it looked tasty, quick and healthy. This seemed like the perfect recipe which it ended up being!
1 can Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies
2 cups shredded cooked chicken
2 cups shredded cheddar or Monterey Jack cheese
3 Tbsp. chopped cilantro (optional)
6 flour tortillas
This recipe is very quick and simple. We just cooked up some boneless chicken tenders in a frying pan with some different seasonings.
Then we dumped the can of Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies in a straining bowl to remove the excess juice.
Next we shredded up the chicken.
Then we set out the tortillas and filled them with the chicken, Petite Cut® Diced Tomatoes, cheese, and cilantro.
We folded the tortillas in half and cooked them for a little over a minute on medium on each side. We cooked them just long enough to melt the cheese and to brown the tortilla. Megan even put butter on the outside of the tortilla before she cooked hers in the pan.
Then the food was ready to eat! This would make the perfect appetizer, because you could cut these into smaller pieces for everyone to grab and enjoy.
This recipe was very delicious and something that we will make again. What sets this quesadilla recipe from others in that this one includes Del Monte® Petite Cut® Diced Tomatoes with Chipotle Chilies. These give the quesadilla an extra kick of spice and flavor. Trust me when I say it is hard to explain. When I ate the quesadill with the Petite Cut® Diced Tomatoes with Chipotle Chilies, they were unlike any other thing I have had before. Then they were warm from the frying pan, which just made this even more delicious. This is a must try recipe.
Something else that I liked about using a Del Monte® canned product was that I knew my body was getting the same essential nutrients as a fresh varieties This was an easy way to sneak in the nutritional benefits of tomatoes.
